This Super-Dupe Kale salad is a delicious combination of healthy, satisfying ingredients wrapped in a low calorie, light sweet and sour dressing. Enjoy it as a main entree salad or a side salad. Feel free to tweak the ingredients to suit your taste, top with chicken or salmon, it is versatile and so good! It also makes a great addition to a potluck dinner party.

Super-Dupe Chick-fil-a Kale Salad, Light Version Dressing


Super-Dupe Kale Salad:

1 half of bag - 16 oz. bag washed and chopped kale

3 cups - chopped fresh broccoli

1 cup - dried cranberries

1 cup - chopped walnuts or slivered almonds

Sweet and Sour Dressing (see recipe below)

Light Sweet and Sour Dressing:

1 cup light olive oil

1/3 cup sugar, plus 1/3 cup stevia

1/3 cup vinegar (half & half distilled and apple cider vinegars)

1/8 cup dried chopped onion

1 teaspoon sea salt

1/2 teaspoon dry mustard

1/2 teaspoon celery seed


Mix together all of the ingredients for the sweet and sour dressing, then allow to sit and mingle while assembling the salad ingredients. I use a shaker bottle.

This recipe makes multiple servings, so place all of the salad ingredients in a LARGE bowl. Pour entire contents of salad dressing over the salad and toss well; chill, then serve. Refrigerate leftover salad in an airtight container, stays fresh for 2-3 days. Enjoy!
